Recently we’ve been pushing to snack healthier around the house. We’re moving in only a few months now (the final countdown!) so now is the time to clear out the junk so we don’t have to move it! I actually purchased a really affordable option off Amazon (you can see it here!) & we ended up using it every single day! The holiday season is super crazy & it is definitely the season! Out running errands & checking off my holiday list I’ve been grabbing a clutch that goes with anything. I always try to keep my bag stocked with essentials like hand sanitizer, concealer, a brow pencil so I don’t look crazy, & a tasty snack I can toss in my bag like the LUNA gluten-free bar options.
Need to go to a work event? Check! Grab milk because we ran out….again…? Check? Head out the door to dinner with my husband? Checkitty check! Know what keeps me going? Making sure I have energy by always having a snack on hand! I have been loving the new gluten-free LUNA bars because I have a bad habit of getting really grumpy when my tummy starts to rumble.
All LUNA bars are now gluten-free & they are still under 200 calories for a suitable snack. They come in an awesome variety of flavors, are made with 70% organic ingredients, have no artificial flavors or synthetic preservatives, & are a great source of both protein & fiber! They tweaked things only slightly to make them gluten-free while still tasting great. I have 4 bars here that Ryan & I sat down & tried together & we loved each one for different reasons. We both agreed we’d reach for any of the flavors again…& that they tasted a bit like a granola & candy bar hybrid! Win!

When it comes to breakfast I jump around a lot. One week I love cereal & the next I can barely stand the thought of food. I discovered something new this fine morning…the most amazing rice cake breakfast ever. Yes rice cakes have a bad rep but I personally like them. Crunchy, come in many flavors, low-ish on the calorie count…what’s not to like?
It turns out cashew butter is magic. Years of eating peanut & almond butters & they were very tasty. Very. But if you’re looking for something new that doesn’t punch you in the face all natural cashew butter is the way to go. I put it on some of my caramel flavored rice cakes & boom…breakfast! If we had gone grocery shopping this would have been excellent topped with banana slices, blueberries, or maybe mix in a touch of pumpkin spice.
Speaking of pumpkins…YUM! Pumpkin coffee was perfection today, my house smells amazing! What do you top your rice cakes with? Any great cashew butter ideas?
Crescent dough is definitely a great emergency food. When I haven’t prepared something, have been working through till dinner, or just have no idea what to make this is a common ingredient. Ready made crescent dough is something I’ve always used but someday I’ll get around to making my own! I use it combined with leftovers or food I need to use up. This time it was a bunch of thin sliced ham in the fridge & a hankering for something cheesy.
Crescent Ham & Cheese Roll Ups
recipe from Home in High Heels
1 8 ounce can refridgerated crescent dough
16 slices thin honey ham
1.5 cups cheddar cheese
2 tablespoons Parmesan (or extra cheddar cheese)
2 tablespoons butter
1/2 teaspoon Italian seasoning
1/4 teaspoon seasoning salt
1. Preheat oven to 350 degrees.
2. Melt butter in glass dish in microwave. Mix in herbs & salt to taste. Set aside.
3. Pop open crescent dough. leave in large sheet for pin wheels. Lay out like a flat rectangle.
4. Sprinkle half the cheese on the dough. Spread out turkey. Top with remaining cheese.
5. Roll into log shape & slice with a very sharp knife for an even cut. Slice into 12, 14, or 16 depending on preference.
6. Baste with melted butter mix. Reserve 1/2.
7. Place in oven for 10 minutes, remove & baste with remaining butter & top with Parmesan. Continue baking 5-7 minutes until bubbly & golden.
8. Remove from oven & serve immediately.
Hubby ate these up! We usually throw veggies in these like broccoli or sauteed peppers. Tonight we were craving “junk” so this was a nice medium. What would you put in roll ups?
I feel like ranch dip is such a California thing. We eat it with nearly everything & I get odd looks every time I dip my fries into it. If you’re a ranch lover who wants a healthy alternative that still tastes like ranch…you’re in luck!
2 tablespoons plain greek yogurt
2 teaspoons ranch seasoning (more or less to your liking)
a bit of water or milk to thin
That’s it! Just mix it all together & gobble it up! I love this with a yellow or orange bell pepper as an afternoon snack. To use as a dressing on salad, thin it out a bit more & for a chip dip you won’t need to thin as much. Just know that if you make a big batch, greek yogurt lasts a long time in the fridge! Just check your date!
