Is it a breakfast? A dessert? A snack? It can be whatever you want- I won’t tell you how to run your life! I personally enjoy mine in the morning since I make it the night before. Chia seeds are an excellent source of energy, zero net carbs, & epic fiber. Turning them into pudding is just an excellent bonus!
The breakdown for my exact recipe is using Trader Joe’s Almond Beverage in Unsweetened Vanilla & without any sweetener. For net carbs- you subtract your fiber from your carbs which = net carbs! If you really need to eliminate something to reduce your carbs/sugar it would have to be the strawberries…but I wouldn’t recommend it! Berries are high in antioxidants, potassium, & vitamin C. Plus, in this recipes, they really serve as an excellent treat & added yum.

The texture here is a lot like rice pudding. With the added sweetness & cocoa-ness it really turns into a dessert for me! If you’re not into the texture- try it blended!!! I’ll be experimenting with that method more soon as well!
- 2 tablespoons chia seeds, dry
- ½ cup almond milk, I prefer vanilla unsweetened
- ½ - 1 teaspoon cocoa powder
- 2.5 oz strawberry slices
- sweetener to taste- which I'll talk about below in the blog post!
- Add all ingredients except the strawberries to a mason jar & shake.
- Put in the fridge for about 10 minutes. Then shake again.
- Leave overnight to plump.
- In the morning, add your strawberries & munch away!
Let’s talk sweetening! This is where “personal choice” really enters the ballgame. Some people like Stevia, others (like me!) prefer Truvia, & even more use real, raw sugar. While I can’t recommend using raw sugar for us keto folks, I do have a favorite addition to my morning puddings! & it is actually a liquid! I really love Sweet Drops which are by Sweet Leaf & are a liquid form of Stevia. I always buy mine off Amazon or when placing a Vitacost order during sales. I have a bunch but for this recipes, I recommend Chocolate!
