Is fat a scary word to you? I wouldn’t be surprised. But that also makes me a bit sad. I wish I’d known more about healthy fats growing up because since I’ve added more to my diet I honestly feel better. I’ve been transitioning to a low carb/high fat diet & this recipe is definitely one of my absolute favorites!
- 6 eggs, hard boiled
- 1-2 avocados, mashed
- 1-2 tablespoons lemon juice
- fresh cilantro to taste
- salt & pepper to taste
- Peel & chop your hard boiled eggs. I tend to cube them a bit because I like mine to have a bit more texture.
- Mash your avocado to desired texture along with the lemon juice, salt, & pepper.
- Mix eggs, torn cilantro, & avocado mixture to create your salad.
- Eat cold!
