Nothing says date night more to my man than great food. & he’s a sucker for fajitas. Actually- we both are. Big time. I’m one of those people who likes lots of options. I order lots of dips & sauces. I like all of the salsas at my disposal. & if there is some kind of sampler- that’s my first choice. Fajitas are basically an acceptable dinner sampler with the added build-your-own fun. & I’m here for it. Nacho Daddy has become one of my favorite spots to hit up with friends…but I realized I’d never taken Ryan. Which is actually hilarious. Above is a photo of him mocking me that I’m happy to share with you. Don’t mock me while I’m holding a camera y’all.
#1 Ryan orders nachos or fajitas at every restaurants unless it is taco specific. (& aren’t fajitas kinda like tacos?)
#2 He orders margaritas everywhere. Or anything lime-based. So basically margaritas.
#3 Ryan hates wearing slacks so casual food is a win.
So obviously, this was the ultimate date spot for us! We happened to go when they were running the Valentine’s Day special which is AMAZING but heads up- everything is available on their regular menu all year!
We started with margaritas- of course. This was the first time I’d had a margarita in ages. I’ve been hosting a lot of brunches & attending events where I opted for water. This is my genuine reaction after my first sip of tequila in what was way too long. I had to order the Sunrise Bliss Margarita because it was both pink & has peach schnapps. That’s all it takes for me apparently. The Sunrise Bliss Margarita contains Kimo Sabe Joven, peach schnapps, lime juice, raspberries, & is sweetened with agave nectar. & is absolutely delicious without being too sweet! Ryan went with the Cadillac Margarita which contains Nacho Daddy’s Double Barrel Tequila, triple sec (here’s my version), house-made sweet & sour, & is topped with Grand Marnier. See? Told you he was traditional! & they definitely didn’t skimp on the drinks- they were delicious & just strong enough to make the night extra fun!
The special offered comes with their gluten-free Tortilla Soup or the house salad. We loved the house salad! I really recommend trying their house dressing as well- the agave & citrus pairs nicely!
They have 3 types of fajitas- marinated chicken, shrimp, or filet mignon. Or you can mix or match! There’s only one horrible problem with their fajitas- after you have filet mignon it is really hard to get anything else. Sizzling. Delicious. & actually has that good charred edge.
& because fajitas are nothing without sides- rice, beans, sour cream, heaping guacamole, & of course the mix of fajita peppers & onions cooked with the meat. Score
Something I’ve never heard anyone mention is they have special tortillas- not just corn or flour. They made them in-house & are ooooober flaky! They hold up really well to a lot of toppings! Which is good. Because I’m extra.
& what is a date without dessert- #amiright? These are Nacho Daddy’s Caramel Apple Nachos. STAHP. These are so good! Pictured are crispy, cinnamon flour tortilla chips topped with whipped cream à la mode, gooey caramel sauces, & simmered Granny apple chunks. I mean- honestly I was kind of having to remind Ryan I was eating them too. Margarita Ryan was a BIG fan of these. & he probably would’ve rather had them all to himself- but they’re huge! Insider tip- order their fantastic Vesta Coffee which is eco-friendly & sustainably sourced that’s locally roasted here in Vegas! Appe some of the à la mode & caramel-y goodness to your cup with dessert. Life. Changed. You’re welcome.
All-in-all…couldn’t have asked for a better date. I really like the Nacho Daddy Summerlin location but they have other locations in Downtown & on the strip. Check them out on their site right here!
