Easy lunches are my jam lately. I’ve been trying to make things in batches that I can eat for a few days in a row. Today I’m sharing one that is basically made for you- in the best way possible. All I did was toss in some protein! Keep reading to check it out & snag a coupon for yourself!
These Betty Crocker Suddenly Grain Salad packs come with everything you need for a meal- all you have to do is add protein. I picked shrimp for this recipe but you could also use chicken, extra beans, or even some avocado. Or leftovers! This one is Southwest but they also have Tuscan & Harvest as well.
Inside each box you get a pouch of grains along with a packet of seasonings. The bag looks like above- you just throw it right into the water! Just follow the directions on the box then drain the the sink for a few minutes. Add your protein then or put in a container to cool down in the refrigerator.
For this recipe I followed the directions on the box then added some steamed shrimp. I added a splash of lemon & extra pepper as well! To the mix itself I added some chipotle seasoning for an extra kick as well. For lunch you can separate this into 4 servings (each box has four total) & then store in mason jars or tupperwares. Then you have lunch for the week! Sometimes I add in some extra lettuce for crunch as well- or celery!
