Ingredients
  • 3 cups frozen green peas
  • ¼ cup fresh mint leaves
  • 2 tablespoons olive oil, extra virgin
  • 1 lemon, zested fine & juice
  • 1 garlic clove
  • 1 tablespoon tahini
  • salt & pepper to taste
Instructions
  1. Cook 3 cups frozen green peas (do not thaw) in a pot of boiling water until tender, about 1 minute.
  2. Use a slotted spoon to transfer to a colander, & run under cold water to stop the cooking.
  3. Let cool completely, then drain.
  4. Pulse peas with rest of ingredients minus the salt & pepper in a food processor until thick & combined.
  5. Season with coarse salt & freshly ground pepper. Drizzle with additional oil if desired. Dip can be refrigerated in an airtight container up to one day.
