A simple hummus recipe that is easy to throw together & adjust to your own tastes. With the addition of a bit of jalapeno, roasted red peppers, & citrus you have something more vibrant.

Ingredients
16 ounces chickpeas, canned, drained well
¾ cup roasted red bell peppers, jarred or fresh
1 jalapeno, seeded, diced (roasted if you prefer)
1 tablespoon minced garlic
3 tablespoons chopped cilantro leaves (one tablespoon if dry)
½ tablespoon paprika
1 teaspoon freshly cracked black pepper
1 tablespoon fresh lemon or lime juice
¼ cup extra-virgin olive oil
Instructions
Add all ingredients except olive oil to food processor & puree well.
Slowly add in olive oil to build the texture & thickness you prefer.
Let set up in refridgerator about one hour for firmer hummus.
Serve with toasted pita bread, crusty breads, crackers, chips, or use as a spread.
