Healthy Avocado Egg Salad Sandwich Recipe (no mayo!)

Ingredients
  • 6 eggs, hard boiled
  • 1-2 avocados, mashed
  • 1-2 tablespoons lemon juice
  • fresh cilantro to taste
  • salt & pepper to taste
Instructions
  1. Peel & chop your hard boiled eggs. I tend to cube them a bit because I like mine to have a bit more texture.
  2. Mash your avocado to desired texture along with the lemon juice, salt, & pepper.
  3. Mix eggs, torn cilantro, & avocado mixture to create your salad.
  4. Eat cold!
