One of those days! I feel like I didn’t have a weekend…where the heck did it go? Either way, it is Monday so I’m a day late posting our meal plan. Here are the 5 meals I have planned for this week. Yes, there are 7 days in a week but I consider them floater days. Sometimes you have leftovers (super common when there is only 2 of you!) & we usually eat out at least once a week. I also try to eat at least one new recipe a week.
Day 1: Boneless, skinless chicken breast with light breading & baked with lemon pepper, peas, & mashed potatoes. Small side salad.
Day 2: Asian turkey cups (like P.F. Chang’s). I’m working on getting a recipe together with photos for you guys, the last few times I’ve been way too rushed.
Day 3: Crockpot cheese enchiladas. Mexican side salad.
Day 4: Orange glazed ginger pork stir fry. Egg drop soup.
Day 5: Valentine’s Day dinner this year will be spent at home. We decided not to venture into the hell of the crowds & bitter servers. I’m thinking a traditional steak, green beans, mashed potato meal. For dessert I’m still looking…but I’ll let you guys know!
So I’m a bit wary about Valentine’s Day dinner. We won’t be grocery shopping until the day of (my husband’s debit card number was stolen & that’s when the money should be back in our account & pay day!) so that is just my guess. I will definitely go for what looks tasty.
I’m also going to be joining back up with Spark People, my absolute favorite site for getting healthy. It is free, allows me to group my recipes & find new ones, track every food eaten, & set lots of goals. I find this is definitely most successful for me.
